Ingredients

  • 200g spaghetti
  • 150g pancetta or bacon, diced
  • 4 eggs
  • 100g grated Parmesan cheese
  • Salt and pepper, to taste
  • Olive oil

Instructions

  1. Cook the spaghetti in salted boiling water until al dente, then drain and set aside.
  2. In a large skillet, cook the pancetta or bacon over medium heat until crispy. Remove and set aside.
  3. In a bowl, whisk together the eggs and Parmesan cheese until smooth.
  4. Add the cooked spaghetti to the skillet with the pancetta, and toss to coat evenly.
  5. Slowly add the egg mixture, stirring constantly until the spaghetti is well coated and the eggs start to set.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with the crispy pancetta and additional Parmesan cheese if desired.
