Ingredients
- 200g spaghetti
- 150g pancetta or bacon, diced
- 4 eggs
- 100g grated Parmesan cheese
- Salt and pepper, to taste
- Olive oil
Instructions
- Cook the spaghetti in salted boiling water until al dente, then drain and set aside.
- In a large skillet, cook the pancetta or bacon over medium heat until crispy. Remove and set aside.
- In a bowl, whisk together the eggs and Parmesan cheese until smooth.
- Add the cooked spaghetti to the skillet with the pancetta, and toss to coat evenly.
- Slowly add the egg mixture, stirring constantly until the spaghetti is well coated and the eggs start to set.
- Season with salt and pepper to taste.
- Serve hot, garnished with the crispy pancetta and additional Parmesan cheese if desired.
